I really love to entertain and am always the first person to offer up my home for a party or shower. My motto is “the more the merrier.” After hosting many, many get-togethers, I have learned a few things about being able to have a nice party and being able to enjoy time with friends as well.
First, make as many things ahead of time as possible. Plan your menu around items that can at least be prepped before your party, if not completed. Set out your dishes and serving pieces the day before. Lighten your load and enlist guests to bring desserts or drinks.
Second, purchase a few ready-made things and embellish them to suit your party. Sometimes I buy hummus and drizzle olive oil and toasted nuts on top. No one will ever know that you didn’t make it! Of course, I could make my own Caesar salad for this appetizer, but buying a salad kit makes putting these cups together a snap. No one will be the wiser, and the presentation is so lovely that people will be begging you for the recipe.
Start by cutting the crust off the bread. Using a rolling pin, flatten the bread slightly. Brush with olive oil mixture.
Gently press the bread into muffin cups. Bake at 350° until golden brown. Cool completely on a rack.
Make the salad according to package directions. Spoon the salad into the cups. Garnish with Parmesan cheese and pine nuts.
