When I was in high school, I used to work at a little pizza restaurant that had the best dessert pizzas. We made them in several flavors—blueberry, cherry and apple—on a cracker-like thin crust.

 

My blueberry cookie pizzas are huge sugar cookies topped with blueberry pie filling and drizzled with icing. They are super easy to make.

 

First I roll out Pillsbury® sugar cookie dough into one big cookie. Then to get that perfectly round shape, I like to use my 9-inch cake pan as a cookie cutter. I take the leftover dough, break it into pieces, place it on top of the cookie and roll it again into a uniform thickness.

 

After the cookie is baked and cooled, I top it with blueberry filling. I just use regular canned pie filling. You can use your favorite pie filling, like cherry, apple, peach or whatever.

 

Next I drizzle on a simple icing made with powdered sugar and milk. Lastly, I sprinkle some brown sugar on top. It’s easy and impressive.
