Who doesn’t like mac ’n’ cheese? I think if you asked people, most would tell you that it’s tops on their list of all-time favorite dishes. But if you didn’t think you could improve on such a classic dish, think again! My BLT Mac ’n’ Cheese is the perfect blend of cheesy and smoky yumminess. It combines the creamy mac ’n’ cheese goodness you love with the wonderful flavors of smoky bacon, spinach and tomatoes.
The mouthwatering one-dish meal is so satisfying for the whole family. It’s also a great way to get the kids to eat some veggies. Because, let’s face it, anything tastes good when it’s smothered in a cheese sauce, right?
I use two different kinds of cheese to give this dish a very creamy texture and smooth flavor. But feel free to get creative and add any cheese you like.
I melt my cheese sauce in the microwave, but you can do it on the stovetop as well. While I’m making the cheese sauce, I partially cook my pasta. I like to cook it 2 to 3 minutes less than the recommended time on the box because the pasta will cook more when you bake it. It’s much tastier if the pasta is not overcooked.
Once I get the sauce and the pasta cooked, I combine them in a casserole dish with some shredded cheese, fresh spinach and cherry tomatoes. Then cover and bake. The final touch is to top the baked casserole with crumbled bacon and panko bread crumbs and then brown it under the broiler. This gives it so much flavor and texture.
