Summertime and the grilling is easy, right? One of my favorite fun dinners is a pizza cooked on the grill. It’s an easy way to have comfort food without heating up the house. Grilled pizza is so simple to make because it cooks fast. Plus, the dough has a lovely smokiness to it.
Because you need to have everything handy and ready to assemble fast, all the ingredients should first be gathered, chopped and measured.

Heat up the grill. Set it on the medium setting (if using gas), and let it get good and hot. Then spread the dough onto the grill. Close the lid and let it cook for 3 to 4 minutes. The top will puff up a little, and the bottom with get dry and lightly browned.
Use a pizza peel or two sets of tongs to flip the dough. Once the dough is flipped, spread on some sauce (or ricotta cheese!) and sprinkle on whatever toppings and cheese you like. Close the lid, and let the pizza cook for another 3 to 4 minutes or until cooked through.
Remove from the grill; let sit a bit. Then cut and serve!
