One thing that I have been falling in love with again is my slow cooker. I went through a period where I didn’t use it at all, but it has become a lifesaver for me. I love it every season of the year, no matter the weather outside. And do you know what I really love? When the slow-cooker recipes call for just a few ingredients and take only minutes to throw together!
This chicken dish is just that. Six ingredients come together for a creamy, spicy, flavorful chicken that is served over rice. I can take a few minutes in the morning to put it together and then have a hot, satisfying dinner ready when I get home. It doesn’t get a whole lot easier than this!
You need chicken breasts, taco seasoning, salsa verde, a lime, cilantro and sour cream. You will also need rice to serve with the chicken.
Place your chicken breasts in a slow cooker and sprinkle with taco seasoning.
Pour in the salsa verde and start the slow cooker. Cook until the chicken is cooked through.
About 30 minutes before serving, squeeze the lime over the chicken.
And sprinkle on the cilantro. This is also the time to start your rice.
Use a fork to shred the chicken.
Stir in the sour cream.
Serve the chicken over rice and garnish with additional cilantro, if desired.
