I have a weakness for cinnamon rolls. And caramel. And ice cream. Yes, I know that is a lot of weaknesses, but they are some of my favorite treats! It could have something to do with the fact that I’m a carb and dairy addict.
Up until now, cinnamon rolls, caramel and ice cream have never been in the same sentence together for me. But what happens when you have Pillsbury® Grands!® Caramel Rolls in the fridge and ice cream in the freezer? This magnificent treat comes together!
Just think ice cream sandwiches, but cinnamon rolls make up the sandwich part. Then drizzle the whole thing with caramel. This is a dessert that any ice cream and cinnamon roll lover will absolutely adore. Keep a few of these in the freezer for when a craving hits, and you’ll be happy they are there!
And the best part? They are super easy to make and only require two ingredients.
All you need is a can of Pillsbury® Grands!® Caramel Rolls and ice cream. I used toffee ice cream because I thought it would go great with the caramel.

Start off by baking the cinnamon rolls according to package directions, reserving the caramel topping. Let the rolls cool.
Take your ice cream out of the freezer and allow it to sit at room temperature to soften up just a little bit. Take each of the rolls and cut in half horizontally. Place them on a small baking sheet so that they are easy to transfer to the freezer.
Scoop about 1/2 cup of ice cream onto the bottom half of each cut roll.
Replace the tops and put the rolls in the freezer (just long enough to harden the ice cream back up).
When you are ready to serve the sandwiches, take the caramel topping and put it in a resealable bag. Cut off a tiny corner from the bag and drizzle the caramel on top of the sandwiches.
Make sure you serve with napkins!
