Tips for Foolproof Pie Crust

  1. Let stand. Let your refrigerated pie crust stand at room temperature for 15 minutes before working with it.

  2. Mend cracks. If you’ve got cracks, just wet your fingers with cold water and press the seams together.

  3. Press the crust. Firmly press the crust into the sides and bottom of the pan before you bake it.

  4. Avoid bubbles. To prevent bubbles in an unfilled crust, just prick the bottom and sides before baking.

  5. Cover it up. Cover the edges of the crust with aluminum foil after the first 15 minutes of baking or as directed in recipe.

When I bake a pie shell, I put the crust in the pie plate, then put parchment paper over the crust and add a thin layer of uncooked beans. They keep the crust flat and it won't bubble while it bakes.
