dinner ideas

I am looking for chicken recipes for dinner. I don't usually have much time or energy, so I am looking for recipes I can use my slow cooker to prepare or a recipe that will go into the oven to allow me to do other chores while dinner is cooking. Any ideas?

Creamy Italian Chicken


1 pkg Italian dressing mix (dry pkg)


1/2 cup water


1 8oz. light cream cheese


1 can cream of mushroom soup


1 bag boneless chicken breast (2.5#)


Cook on low in crockpot for 7 hours on high or 3 hours on low.  Serve over brown rice or whole wheat pasta.   8 servings  303 cal. 11g fat 3 carb 46 prot.  (my calculations) We really love this recipe.

I hope you like this one, it is easy and pretty fast.  Quantity can vary depending on how much meat you want to add.

Salsa Chicken
2 chicken breasts, skinless and boneless. (you can use chicken thigh meat also)
1 large onion
2 peppers. I like to use 1 red and 1 green (or both red if I have them)
1 or 2 jalapeno peppers seeded and ribs out
1 jar of favorite salsa, I like a medium heat salsa.
Cut chicken into strips about 3 inches long by about 1 inch wide.
Cut the onion and peppers to approximate size and shape of chicken.
Brown the chicken in a hot skillet.  Add the veggies to the pan, and cook a bit.  Add 1/2 jar of the salsa and stir a bit to get the brown goodies off the bottom of the pan. 
At this piont I toss the pan in the oven at about 300.
I will make rice using the rest of the salsa as part of the liquid called for.
When rice is done the chicken will be done also.
If you want to, add some cheese to the top of the chicken mixture.  I have used pepper jack cheese and it is good as well as some of the grated cheese mixes that have the "mexican" spices added.
