Easy Light Cooking Recipes

I have been on Weight Watchers and need some new light cooking recipes to feed my family. I seem to cook the same things and want something new and easy. Any help would be greatly appreciated.

  I too try to cook as light as possible.  but it can get old too.   I have a few recipes that might work for you.


 


  Broccoli with Garlic (actually a weight watchers recipe)


Serves 4


Ingredients


 


2          teaspoons olive oil


1          pound broccoli, chopped and steamed until crisp tender


3          garlic cloves, minced


¼         teaspoon dried oregano, crushed


¼         cup julienned roasted red bell pepper


 


 


 


 


Directions


 


1.         In a large nonstick skillet, heat the oil.  Sautee the broccoli, garlic and oregano until the garlic is golden, about 3 minutes.  Stir in the roasted pepper; cook, stirring frequently, until heated through, about 2 minutes.

White Bean and tomato Salad (this is Great for picnics and barbecues)  tastes like potato salad with out all of the mayo and fat.


Serves 4


Ingredients


 


1          tablespoon olive oil or vegetable oil


1          teaspoon red wine vinegar


1/8       teaspoon salt


¼         teaspoon coarse ground black pepper


1          medium tomato, chopped


¼         cup sliced green onions


1          (15.5 oz.) can great northern beans, rinsed and drained


 


 


 


 


Directions


 


1.         In medium bowl, combine oil, vinegar, salt and pepper; blend well.  Add tomato, onions, and beans; stir gently until well mixed.

Chicken Tonette ( this is actually one from Kathleen Daelmans from food network)


Serves 4


Ingredients


 


2          cups plain lowfat yogurt
1          tablespoon tomato paste
1/3       cup mint leaves, chopped
1/3       cup cilantro leaves
2          teaspoons minced garlic, or 1 clove grated
½         fresh lime, juiced
1          teaspoon curry powder
1          teaspoon chili powder
1          teaspoon cumin
1          teaspoon coriander
1          teaspoon turmeric
1          teaspoon salt
½         teaspoon black pepper
3          (4-ounce) pieces chicken diced into 1-inch cubes
1          pineapple, cored, peeled and cut into 1-inch pieces
1          large red onion, cut into 1-inch pieces
Black Beans, recipe follows


 


 


 


 


1.         In a large bowl combine all ingredients except the chicken, pineapple, and red onion, and mix until evenly combined. Separate the mixture in half, placing one half into a re-sealable bag with the chicken. Marinate this overnight in the refrigerator. Optional: Skewer chicken, onion, and pineapple for presentation. Keep the remainder of the marinade in the refrigerator.
On a non-stick grill pan, over high heat spray a little olive oil to coat the pan. Place the marinated chicken onto the hot pan. Brown the pieces on all sides. To the same pan, add the onions and pineapple. Once the onions have softened remove both the onions and the chicken and reserve. Continue to cook the pineapple until it has caramelized on both sides. Remove to a plate with the chicken and onions.


 


 


Black Beans and Rice:


 
2          cups long grain white rice
3 ½      cups low sodium/low fat chicken stock
1          teaspoon turmeric
1          teaspoon chili powder
2-3      tablespoons marinade from Chicken Tonette
1          can black beans, drained


 


 


1.         Place rice, stock, turmeric, and chili powder into a large microwave safe bowl or measuring cup. Microwave on high for 10 minutes and on medium for an additional 15 minutes. Remove from microwave and fluff rice with a fork. Stir in marinade and black beans. Serve with Chicken Tonette.
Yield: 6 servings

Sounds really good except for the pineapple. I dislike warm pineapple. My ex-wife used to make a chicken dish with that and I hated it. Hence, an ex-wife....among other things.

Hello sometimes I have trouble printing the recipes off to but my daughter told me to use my printer option on my browser on my computer.hope it works for you.

So when you are looking recipe you want- look under the photo of the desired meal, you have four options. Add to Recipe Box, Add to Grocery List, Email Recipe and finally, Print Recipe. When you click on “Print Recipe” There should be a pop up. In the top right of that pop up- it says “Print Recipe”. From there- your computer settings should bring up your printer. If that is not working you can always go to File - > Print. OR. If it’s still not working- I would email yourself with the recipe and then print it off through your email. I hope this works.
