Magazine Review: Prize Winning Recipes, Collector’s Edition (Volume 17, Number 4)

I was in the bookstore the other day and I picked up this magazine. I read it during my train commute into work.

My family was in town for the weekend and I was looking for a fun breakfast idea. After much debate- I picked the Ham 'n Cheese Omelet Bake http://www.pillsbury.com/Recipes/ShowRecipe.aspx?rid=14521 that was submitted by Julie Amberson in 2004.

I ended using fresh mushrooms and red onion (because I had them in the house already). Putting it together was very easy and the family thought it was delicious. There was only four of us- so I cut the recipe in ½ and cooked it in 8 x 8. There wasn’t a crumb left! Served it with iced green tea. It was a lovely summer brunch!

I am putting this book with my cookbooks. It has a bunch of new(er) favorites. For Example- the Grands! Tuna and Green Chili Melt on page 75- Yum! I love it for a weeknight meal. (Thank you Cynthia Gedling in AR!)
