Frost & Bake Cookies

Frost & Bake Cookies recipe came out in the 1970's.  It used a box of Coconut Pecan Frosting Mix.  Pillsbury no longer makes this frosting mix.  Does anyone know how to substitute the mix?  This was a family favorite and I haven't been able to make it for at least 10 years.  I would love to surprise my family this Christmas with one of our favorite cookies.   Thanks

Here is an idea:

Ingredients

  •   Frosting
  •   Cream Cheese, softened 2 lb, 4 cups
  •   Butter, unsalted, softened 2lb, 4 cups
  •   Confectioners Sugar 8 lb, 34 cups
  •   Pecan, chopped 4 oz, 1 cup
  •   Coconut, shredded 6 oz, 1 1/2 cup
  •   Water, cool (approx 72°F) 4 oz, 1/2 cup
Preparation
Combine softened cream cheese and soften butter in mixer bowl. Mix using paddle attachment on low speed until combined, approximately 2 minutes. Stop mixer. Scrape bowl and paddle. Mix an additional 5 minutes on medium speed. Add confectioner's sugar. Mix on low speed for an additional 1 minute to incorporate sugar. Mix on medium speed for 4 minutes. Add Pecans, coconut and water. Mix on low speed for 2 minutes. Stop mixer. Scrape bowl and paddle. Mix on low speed for an additional minute. Refrigerate leftover frosting for up to one week.

I don't know if this will help you ... in the PBO book for 23rd PBO, one of the GP winners (Quick 'n Chewy Crescent Bars) called for the frosting mix.  This, evidently, was near the time that Pillsbury was discontinuing the boxed frosting mixes.


They had this addition to the recipe for above in their PBO book:  If frosting mix is  not availab le, combine 1 cup coconut, 3/4 cup firmly packed brown sugar, 1/2 cup flour and 1/2 cup chopped nuts; cut in 1/4 cup butter or margarine (omit melted butter in recipe)


I think I'm familiar with the recipe you love -- and have made it.  In fact, I think I was a finalist at that PBO - it was 1969 (20th PBO); never met the woman who made those cookies but they were good.   I, too, miss the ease of those boxed mixes but using the info I listed above.. I have altered a few of my favorites (I know there was a simple coffee cake or sweet rolls that my family really loved -- and I did come up with a pretty good version - using the instructions from the 23rd.  Hope you can alter the cookies .. your family would be so thrilled I am sure!
