This was always a comfort food for the kids and I on a rainy afternoon, and the cupboard was a little bare.

GRAHAM CRACKERS AND VANILLA FROSTING

• 1 box or 3&1/2 cups confectioners sugar


• 3/4 stick butter at room temperature


• 1-1&1/2 tsp. vanilla


• several tablsp. milk 


• a dash of salt


• 1 box graham crackers

Mix butter, sugar, and salt well.  Add vanilla and mix.  Add milk a tablespoon at a time, beating well by hand till you have the thick consistency of frosting.  Spread a thin layer of frosting on a cracker and top with another cracker.  Repeat using hopefully all the frosting and crackers.   My kids loved to make it, then put the cracker-sandwiches together, and we made memories at the same time.
