Re: ginger cookies

Hi there,

I have a family recipe that makes soft, delicious molasses sugar cookies.  I was just thinking of making some (I haven't made them in a long time) - and saw your dilema.  I hope you try these - they've always turned out great.  They will hold their shape better if you refrigerate them before baking.  But don't worry, if you can't wait, just make and bake and they're still yummy.  Enjoy....

(Oh-I just read on the directions that you're suppose to let the shortening cool.  I've made this too many times to count, and have NEVER let it cool.  Just be sure to add the eggs after the sugar and molasses, or they'll cook a bit in the hot shortening.)

3/4 c shortening

Re: ginger cookies

Uh-oh, did my last message post?  I was just starting to give you a delicious recipe for molasses sugar cookies, and may have pressed the wrong button.  Anyway, these are great - I think you'll like them.

3/4 c shortening      1 c sugar          1/4 c molasses      1 egg            2 tsp baking soda

2 c flour      1/2 tsp each cloves, ginger, salt      1 tsp cinnamon

Melt shortening. Let cool (or not). Add sugar, molasses, and egg. Beat well. Add dry ingredients. Mix well - chill.  Form into 1" balls, roll in granulated sugar.  Bake 350 for 8-10 minutes.

GOOD - I SEE THAT IF YOU COMBINE MESSAGES ONE AND TWO, YOU'LL GET MY FULL MESSAGE.

Best of luck with this recipe...........Janice
