I think guac is so great.  My favorite is when they make it at your table so you can see all the ingredients that go into it.  Always makes me think I should be able to whip up a tasty batch at home, but I haven't figured out the right proportions yet.  Or maybe the key is finding ripe avacados?

my favorite mexican food i guess would have to be the cheese dip or the burrito although

all of their dishes are wonderful and hard to choose a favorite.

2 ripe haas avacados, 1 medium size tomato, 1 small onion, 1 4oz can of chopped green chilis, garlic powder, lemon juice, tabasco sauce, salt & pepper.

Peel avacados & mash (can put in food processor but do NOT puree).  Add chilis. Chop tomato & onion into very small pieces - add to avacados, add approx 1 teaspoon of garlic, approx 1 tablesppon lemon juice, a few dashes of tabaso, salt & pepper to taste.   Refridge for about an hour.....Enjoy!!!

I love tacos but I had an idea to make a casserole out of them. I take regular flour tortillas, ground beef, green onions, fat free refried beans, taco seasoning, and bagged four blend mexican cheese, and Old El Paso mexican cheese sauce in the jar. First I brown the hamburger, then drain it. Then I add the taco seasoning with a 1/4 cup of water. I also add the refried beans and cheese sauce and stir. Once that comes back up to a simmer I add the chopped green onions. Now I take a casserole dish and start assembly. FIrst a layer of tortilla shells, then a layer of the hamburger mixture, then a layer of the shredded cheese. Repeat this until the casserole dish is full and put a final layer of the shredded cheese on top. Bake at 350 for 10-15 minutes and serve with taco sauce and sour cream. My husband and kids love this dish as well as I do.

I love tacos and could eat them everyday if I could.  The recipe sounds great. I think I will try it on my family. I enjoy pretty much all mexican food.

Your talking to the texmex kid a Native Texan.  There are many favorites when I cook Mexican food.

Chili Relanos are at the top, yet hard to beat Carne Asada. Yet for just sides, you cant beat pico with fresh guacamole and Im taking the fresh stuff. I like to mix it almost half and half. That in itself is a meal.

I like Tocos..........but I like the crunchy corn shells. I also make Toco salad and make my own bowls from scratch. I have the bowl shaper, and love to use it.

stuffed  jalapenos

 1 can well-drained tuna

3-6 oz. cream cheese (light also works well)-room temperature

1/2 cup sour cream (light also works well)

2-3 minced green onions

salt & pepper to taste

2 or 3 dashes garlic powder

2or 3 dashes tabasco sauce or equivalent

12  jalapenos-seeded and ribbed (use gloves)

blend first 7 ingredients together then stuff the jalapenos and chill.
