What do you do with your Thanksgiving leftovers?

Buying that big turkey is often a gift that keeps on giving, even after the holiday. What do you do with your leftovers?

I have started buying a much smaller turkey and preparing fewer side dishs and amounts. I still have turkey for sandwiches for a day or two and then the bones for soup. I always make homemade egg noodles, for my soup, the first snow after Thanksgiving for it is everyones favorite thing about Thanksgiving.  Back in the day I used the turkey for pot pie using Pillsbury pie crust or biscuts for the topping but we are all having to watch our carbs so no more pot pies, or not as many anyway.

Hi, Im jenn And I really love cooking. And I want to share a good recipe for leftovers. Well, my husband loves to eat and I don't feel like packing him the same food (LEFTOVER) so I went ahead and looked for recipe online.. I want to make an "empanada" but it will take an hour for the dough to rest and i want to have a dough immediately. So I went and got my Pillsburry buttermilk biscuit, since theyre already round, all you have to do is make them flat with a dough roller and it was fabulous. I saute'd my shredded turkey (dark meat )with celery, onions, peas and waited for it to cool. I put a teaspoon of cranberry sauce on top and sealed it using  the fork to seal the edges like the usual empanada.brush it with eggwash and bake it for 18 mins. Hmmmm it is really good!!!. Pillsburry makes the best biscuit!!( "my empanada version")

That's great,that u make your own home-made egg noodles. Your home-made turkey soup must be really good. I've been also buying a small bird,for the holiday. Was a private care-giver & my client went into a rest home. So, I really don't need to roast a turkey anymore!!! This year, I housesat, for my daughter,she has her cat & my cat!!! So, this year it was me & the cats for Thanksgiving!!! The cats & me roasted a large chicken, dressing & serve a mushroom gravey w/ vegetable in it over the dressing. I didn't brother with the traditional fixings, for Thanksgiving Dinner. For, a dessert, make a apple pie Crumble!!! All in all had a great Thanksgiving Day!!!! With the leftover, will make tacos, enchildas & chicken w/ dumplings. Linda
