Cooking for One

My husband is gone during the week in the summer.  I need to find good recipes ideas for cooking for myself only.  I know that I could just make a regular meal and save the left overs, but it gets old eating the same meal all week. 


Plus we don't have a dish washer, so it would be nice to not use all the dishes I have to cook a meal for myself.

Cooking for one difficult but it can be done!. I tried hard to master this when I lived alone in college.

These are things I learned:

(1) Embrace the ever-changing salad. Spice up your daily salad. I might grill one chicken, or boil an egg or open a can of beans (Though freeze the rest though- they don’t save long once they are out of the can). Or I may even make a taco salad. For some reason, when you get creative with your salads- you’re less likely to get sick of them. If you are looking for some salad inspirations (you’ve come to right place!) (3) Embrace an ingredient… and embrace it again in another form. When you click on http://www.Pillsbury.com/recipes/recipelanding.htm

Click on the ingredients on the left side bar that you want to use. It will narrow down the search and inspire you with different recipes for the ingredients (or type of meal you want!)

Thank you so much!  The salad idea is a great one.  Preparing ingredients the night before, for the next day's lunch, is also a great idea.
