The Cooking Light Magazine Website is awesome, and I can recommend 2 free weightloss sites as well that have great information and recipes.


 


(1) Sparkpeople.com - have been a member for 3 years now, and while my weightloss efforts have not been what I want them to be, I have learned alot -


(2) Livestrong (Lance Armstrong's site) - A little more difficult to use than I would like but again, great information.


 


Check the library book sales and see what kind of cook books you can get - if you decided to do spark people, look me up  (MizBuffett)

Hi Sherry.  Recipe for you that is lowfat and probably ww friendly as well.  It is so delicious that anyone who likes Tex-Mex, should like this.   And if you are not dieting, you can top off with Fritos or tortilla chips.  If you don't like hot, use regular tomatoes and mild taco seansoning.  If you DO  like hot, like  myself, buy the jalepeno and hot version of everything, or tone down as suits your taste.  This really satisfies the cravings as it has loads of spices.  I don't add salt as almost everything has plenty in it.


TACO SOUP


1 lb. LEAN ground beef-I use alittle less, as what you want is the flavor.


1 large chopped onion


2 or 3 cloves minced garlic


1 can rotel diced tomatoes and green chilis(or store equivalent)


1 15 oz can diced tomatoes


1 pkg taco seasoning


1 pkg dry ranch dressing mix


1 can corn(I use the frozen, no added sugar, and use about 1 1/2 cups-


     or you can use frozen mixed veggies also)


2 cans pinto beans, chili beans, etc.(if you like warm, use one with jalapenos)


Optional toppings-chopped green onions, fat free shredded cheese


 


Brown ground beef, then drain well, using paper towels to absorb any excess grease.  Place back into pot, add onion and garlic and cook and stir for 3-5 minutes, medium  heat.  Add the 2 seasoning packets and tomatoes. Cook and stir another 3-5 minutes. Add other corn and beans.  Simmer 20 minutes.  I made some yesterday and it took very little time and prep.  And sure tasted great on a chilly afternoon.  Love to all, ldbayou

Hi Sherry.  This is the 3rd time for me to try to type this to you.  There is a black hole in cyber space sucking up my replies.  Oh well.  Here is a low fat, low cal, and ww friendly recipe that is loaded with flavor, which is what we want when dieting.  It really satisfies my cravings.  Fabulous for those who love Tex-Mex as I do.  And you can adjust the hotness up or down according to your preferrence.  I love the heat and buy everything with jalapenos or the hot.  Read labels and find all the items that are fat free.  If not dieting, you can top the bowl off with Fritos or tortilla chips.


TACO SOUP

Hi Everyone:

I smiled when I saw this thread re-activated.

It’s resolution time again!   No worries- I’m also in the same boat of wanting to eat healthier and smarter. 2009 = slimming to the weight I “should” be. 

What is wonderful about this site is the nutritional vales are broken down (for those specific diets).  On the tabs above, they have a tab called “Recipes”- (click on that) and from there one of the options you can click on the Health. Once you click on that it opens it up even more to: High Fiber (240), Low Calorie (131), Low Cholesterol (1013), Low Fat (111), and Low Sodium (470)

I think sometime this week I'll try the tasty looking Salsa Lentils . (it's in the low cholesterol section)

I am on a diet with my daughter ( to inspire her to lose ). We need simple recipes that our husbands will also enjoy.

I have a great chicken dish that I do with a rice side.
2 Chicken breasts, boneless and skinless.
1 med or large onion
1 or 2 peppers could be red or green doesn't matter
1 jar of your favorite salsa
Cut chicken breasts into strips about 1 inch by 3.
Cut peppers and onion so they are about the same size.
Saute the chicken until it begins to get golden brown.  Remove the chicken from the pan.  Add the veggies and begin to saute them.  Add chicken back to the pan and add half the jar of salsa.  Put the pan in the oven to kep hot while you finish the meal.  You can also leave the pan on top of the stove on low.

Make rice.  I will take 1 cup of rice and add 1 cup of water and the rest of the salsa.  If you need more liquid just add more water.
Cook the rice as you normally do.

If you want to add a little bit of cheese to the top of the chicken sprinkle some on and place under broiler until cheese melts.  The cheese is good but not necessary.
This has almost no added fat, just a little if you used oil in the pan to brown the chicken.  I have made this using 1 chicken breast for 2 people and just a lot of onion and peppers.   If you wanted to make it a bit healthier you could use the brown rice, I have never tried it that way but I would guess it would be pretty good.

Hi, I'm also trying to mantain my weight however I am finding very few good nutrition meals.

Though, for those people who are on the same path as I.. Here is a recipe I found in Pillsbury book.


Proscitto Spinach Pinwheels- Which is my favorite :)


1 Can of Pillsbury dinner rolls, 1Pack of sliced prosciutto, 1box of Giant thawed out spinach (drained, 1/4C of Shredded Asiago Cheese, 1 garlic clove (chopped), 1T of finely chopped onion, and 1 egg beaten


Just heat oven at 375 in sprayed pan unroll the dough  and arrange the prosciutto evenly over the rectangle. Then in a small bowl mix the remaining ingredients except the egg. Spoon the spinach mixture evenly over the prosciutto. Starting with long side up, roll up;pinch long side to seal the dough. Then with a serrated knife, cut into 24 slices. Place the cut side's' down on the cookie sheet. Brush with egg


Finally cook for 10-15 minutes or until golded brown. Serve warm (i hope you enjoy) I will also have more meals soon

 I just joined about 30 minutes ago.  I've been enjoying reading the blogs...which is something new for me.   Just wanting you to know that gastric bypass was my ONLY way I could begin to lose weight and get on top of it...unfortunately.  I had been in a head on car accident in '91, broke both feet, hip & pelvis - etc etc etc...so being ambulatory was very very difficult.  The combined problem of me loving food, loved cooking and eating, and being quite immobil, added many many pounds to my 5'6" body.  When I got married in '69 I was a size 12, 147 lbs and when I had my surgery I had ballooned to 352 lbs and in a 5X size clothing.  Thanks to my surgery, I have lost 140 lbs - still have about 50 i want to get off.  If you do have the surgery - begin exercising immediately - even if it's sitting in your chair and waving your arms and jiggling your legs.  It's a beginning.  I didn't do any exercising until I had lost almost all my weight - and now have lots of baggy skin.  Of course, it makes a difference how long you've been heavy - how much your skin has stretched out - the resiliance and heridity if it will spring back into shape.  I love my gastroenterologist - he knows exactly what happens to a person when they have the surgery, because he had the surgeon who taught him, also do a bypass on him.  He needed to lose weight also.  


Just a word of warning...i've gotten to a plateau and it's difficult to get the rest of it off, b/c I've stretched my stomach a bit, and conditioned my stomach to being able to eat some sweets again.  I should have never done that - it caused me to stop losing way too quickly.  Best of luck if you decide to go ahead with the surgery.  It was a life saver for me.   It also has to be a mental change to be able to stick to a change in eating habits.  I slip occasionally - way too often actually - and have to change my mentality back to where it was when I had the surgery.

Good luck getting "back on track" I know it is so hard to loose weight.  When Imy husband and I started on our "diet" I thought , yeah this isn't going to last long...we've done this before and it never lasted.....oh well here we go again.... all these thoughts went through my head and you want to know something, about a month into it I actually had the thought go through my head..I am going to make this work this time! it was like a switch was turned on and I knew that I was going to make this work. 
I have said it is just like giving up alcohol or smoking you can't do it for someone else, you can't do it for a wedding,a reunion you have to do it for yourself.  The only problem is an alcoholic can live with out alcohol and a drug addict can live with out drugs but we can't live with out food.  That makes it a little more of a challange. 
I started working out, at home, after I had lost over 100 pounds I did join Curves because I needed something more than what I was doing at home and I wanted the comfort of an all womens club.  Been there ever since I am now a Coach there and I love it.
OK  I will get down off my soapbox...
Again good luck getting back on track.  If you need any encouragement just drop a note here.

Your story sounds so familiar. I have always had weight issues and got very depressed had sky high blood pressure, back problems etc. On Dec. 5th I had bariatric surgery. I have lost 58 pounds so far. I am off of two of three blood pressure meds. and off my anti depressant. I just know that I will never be able to eat some things and I have not had a problem with that. I feel so much better. I can cross my legs again, get off the couch with ease and have a much better outlook on life. I need to eat alot of protein foods and very little sugar. Anything I buy has to be 5 grams of sugar or less. No breads or potatos, and my portions are very small but so is my stomach. My stomach is the size of an egg now. I would recommend the surgery to anyone who is struggling as much as you are. In some cases your diabetes is easily controlled because of your diet. Good luck to you.

I HAVE MAINTAINED MY WEIGHT-LOSS FOR 3 YEARS NOW.  I've loss 39 pounds and would like to keep it off. But, sometimes it so hard because i;am such an junck food eater. So will you please give me some tips on good recipes.                                                              joesibel

I try to eat 4-6 times a day to avoid eating a lot on the main meals. Cereals, coffee/tea, fruits, yoghurt on breakfast-mid break. Then meat/salad or fish, pasta in the afternoon and a light diner to sleep well.


Not diet at all, just eating a few of everything will help.
